Strawberry Ooey Gooey Butter Cake
If you are craving a decadent, simple dessert guaranteed to impress your family or guests, this is the one. This popular mid-Western dessert hails from the St. Louis area. This recipe is perfect for novices. I add fresh sliced strawberries and strawberry coulis for a real knockout punch.
Serves 8
Ingredients:
18oz box of yellow cake mix
10” pie pan or 13” x 9”greased with butter and a light coating of granulated sugar
½ cup of melted butter
3 eggs
8oz of softened cream cheese
16oz box of powdered sugar
Strawberry Coulis
1pt of fresh hulled strawberries
¼ cup of granulated sugar
2 Tbsp. of water
½ Tsp. of balsamic vinegar
2 Tbsp. of water
1 Tsp. of corn starch
Directions:
Mix together cake mix, one egg and melted butter.
Press into greased pie pan.
In a separated bowl beat cream cheese until fluffy.
Add in powdered sugar and beat until smooth.
Pour mixture over cake mix in pie pan.
Bake at 350 degrees for approx. 40 minutes.
Allow to cool until warm.
For the strawberry coulis, combine hulled strawberries, sugar, 2 Tbsp. of water and balsamic vinegar in a sauce pan. (save a few strawberries for garnishing)
Bring pan to a simmer, reduce heat to medium-low, cover and simmer for 15 minutes.
Mix water and corn starch together. Add to sauce pan.
Continue to cook until mixture thickens approx. 2 minutes.
Place mixture in blender and puree until smooth. Allow to cool.
Top serving of Ooey Gooey Butter Cake with fresh strawberry slices, drizzle with strawberry coulis, dust with powdered sugar and serve.
